Fire Cider Electuary

This quick fire cider electuary stirs raw honey and apple cider vinegar with ginger, lemon peel, turmeric, garlic, onion, ancho chile, and cayenne into a thick, spoonable paste. It has the sweet, sour, and fiery flavor of fire cider without horseradish or a weeks-long infusion.

Notes

  • This recipe makes approximately ¾ cup. Actual yield may vary slightly. A jar that holds at least 1 cup (8 ounces) works well!
  • Ancho chile powder adds a deep red color and mild, smoky, fruity heat, while cayenne adds a sharper kick.
  • For a milder electuary, reduce or omit the cayenne. For more heat, increase it gradually to taste.
  • It thickens as it rests. If it seems thin at first, don’t fret. The powdered spices need time to hydrate.
  • Keep refrigerated and use a clean, dry spoon each time. As long as no water or anything else gets into the jar, it keeps a very long time. I usually make it through a jar in about a month.
  • Do not give honey to children younger than 12 months.
